Greetings Loyal Subjects of Baconia! Your King has a recipe to share!
That’s right – but this one is a little different because it’s actually a recipe for something you can make with your LEFTOVERS from Thanksgiving dinner………..if you’re like my Mom you always have lots of leftover mashed potatoes. She goes nuts making mashed potatoes (blame my Dad because he loves mashed potatoes with gravy). ANYWAY, this is a delicious little recipe that makes something that’s yummy for the day after – especially BREAKFAST! They’re delish with scrambled eggs or whatever.
BACON-CHEDDAR PATTY CAKES
Ingredients:
3 (or more!) slices of bacon
1/2 teaspoon salt
1/2 teaspoon black pepper
4 cups of mashed potatoes
2 eggs
1 teaspoon onion powder (optional)
1 cup shredded cheddar
Directions:
- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Remove the bacon slices, crumble, and set aside. Leave the bacon drippings in the skillet.
- Mix the mashed potatoes, eggs, onion powder, salt, and black pepper together in a bowl; stir in the crumbled bacon and Cheddar cheese.
- Form the mixture into 8 patties. Heat the bacon drippings over medium heat, and pan-fry the patties in the drippings until crisp on each side, about 4 minutes per side.

Yes I hear you…………………..they are delicious too. You can make them ANY SIZE you want. Silver dollar size or larger……..they kind of melt in your mouth too. What a treat. So – give this one a whirl on your “post-Thanksgiving guests” who stick around for breakfast the next day OR your family. You’ll be getting some hugs from this one!

I love that it’s EASY too………Mom and Dad love mashed potatoes so she makes them often….there’s always extra – Mom makes potato pancakes for breakfast next morning but this recipe is a little different with the cheese!

Potato cakes! You know you just made me happy! Interesting Virginieeeeeee, we don’t use eggs, and use as much flour as needed to make them sticky. Next time we will definitely have to use CHEESE!

Yes it’s a different way than I make them too but this is extra tasty with the cheese and they taste less “flour-ey” with the eggs keeping it all stuck together instead of flour. I wasn’t sure how it would work but by golly it did work and they are TERRIFIC.

I always make more mashed potatoes than we can eat and I usually make potato pancakes with them for breakfast the next morning – so this is just a little variation of that and we LOVE THEM!!!!!

Holy Moly, Teddy. How can anyone go wrong with somthing fried up in bacon grease. Mom says that these must be ;loaded with flavor and CALORIES, but she’d make and eat them for sure. We had amazing wind yesterday too – Mom says “it goes right through” her (whatever that means). If she had a fur coat like I do, she wouldn’t be so cold. I do think it was nice of her to bundle up and take me outside though for a while…..I just hunker down in the leaves and enjoy the fresh air while I can hear her teeth chattering while she sits in her chair and keeps an eye on me!

They sound very similar to Bubble and Squeak except that doesn’t have bacon. Mondays is always B&S when I mix all the leftover veg in with the mashed potato and fry them as little patties. I usually added grated Cheddar too although that doesn’t traditionally go in it. I will definitely be adding bacon next time as well. My tummy is rumbling just thinking about it!

Your Bubble and Squeak is different than ours. We put the mashed potatoes in a pan and add cut up brussel sprouts or I guess any vegetable would do. I like your idea. I’m going to try patties this year with leftover mashed potatoes and sprouts.

I hadn’t thought about it being similar to Bubble and Squeak but it sure is – Mom will try adding in leftover veg too. These are pretty yummy with bacon though!! 🙂 🙂 🙂

We always have tons of leftovers too but turkey leftovers make for yummy turkey sandwiches and mashed potatoes make GREAT “Patty Cakes” !!

While I’ve never had one myself, my Mom and Dad always make HAPPY FACES when they eat them so I think that’s a good sign!
