Greetings from the Castle Kitchen – it’s your King – Teddy – bringing you some Halloween fun!
I thought since the Halloween celebration is getting closer that I’d concentrate the next few weeks on some fun Halloween-ish type baked goodies……….things that would be yummy to have around for snacks or part of a meal you might be preparing! This bread I’m making today is DY-NO-MITE for breakfast or any time. My Mom is a big fan of pumpkin “anything” and if you are too, you will enjoy this one. No it doesn’t have bacon in it – for the next few weeks the Castle Baconia Kitchen will not NECESSARILY be bringing you bacon-oriented things!!

Crumbly Pumpkin Bread
Ingredients for the bread:
Cooking spray
2 c. all-purpose flour
1 tsp. ground cinnamon
1 tsp. baking soda
1/2 tsp.baking powder
1/2 tsp. salt
1/2 c. (1 stick) butter, melted
1 1/4 c. granulated sugar
1 c. pumpkin purée
1/3 c. sour cream
2 large eggs
1 tsp. pure vanilla extract
For the topping:
1 c. all-purpose flour
1/2 c. butter, softened
1/2 c. lightly packed brown sugar
1 tsp. ground cinnamon
1/4 tsp. kosher salt
Directions
1. Preheat oven to 350 degrees. Line an 8″x4″ loaf pan with parchment paper then grease with cooking spray or softened butter. In a large bowl, whisk together flour, cinnamon, baking soda, baking power and salt.
2. In a separate large bowl using a hand mixer, beat melted butter, sugar, pumpkin puree, sour cream, eggs, and vanilla. Gradually add dry ingredients to wet ingredients until just combined.
3. Make topping: In a medium bowl, stir together all ingredients until large clumps form.
4. Transfer batter to prepared pan then scatter topping on top. Bake until toothpick inserted in center of the loaf comes out clean (about 1 hour to 1 hour 10 minutes).
My Mom thinks this is totally heavenly stuff but she’s a pumpkin lover – if you are too, try this one. The topping obviously is an optional thing but it makes a big difference (so says Mom!!!!).

Mom says that topping “makes” this bread……but she loves everything that’s been pumpkinized…..one of her favorite flavors!!!

My Mom hasn’t made pumpkin pudding before but it sounds wonderful – Mom makes breads, pies, and cheesecakes with pumpkin – has always been a pumpkin person!!! I’m glad you like me in my witchy chef’s outfit – I figured why not be a little DEVILISH for Halloween!

Bread cakes are Mom’s #1 favorite. Pumpkin anything is good around here, too. Mostly, it’s a teaspoon of pumpkin puree in my kibbles each night. Mom says it’s good for my tummy.

Cupcake it is VERY good for your tummy – I know lots of pups and a few kitties who eat it to keep their tummies HAPPY!!!!! This pumpkin bread is my Mom’s favorite……..especially with the topping!

OH MY GOODNESS! This is my favorite pumpkin cheesecake recipe too!!!!!! There’s something about a recipe from Kraft – and I only buy Philadelphia Cream cheese anyway. This bread is really nice – especially with the topping but I do love pumpkin cheese cake too………

Pam, I’m thrilled to know that you already had that recipe. It’s very easy… We buy Philadelphia cream cheese in bulk (Sams) then freeze what we don’t need.

I’m sorry Teddy, but I have to admit I don’t like pumpkin. I made pumpkin pie once and didn’t like it at all. I thought it might have been the way I made it so had a slice when I was out somewhere to give it a second chance, but I still didn’t like it!

Well, lots of people don’t care for it – my Mom’s Dad loved it so Mom always made it for him. The other thing that’s similar to pumpkin pie here is sweet potato pie. If you like sweet potatoes you could try using mashed sweet potatoes instead.

I do like sweet potatoes so maybe I will try it with them instead. One of my two favourite soups is Parsnip and sweet potato. The other is broccoli and blue cheese.

Oh boy – broccoli and bleu cheese sounds amazing – I love both of those things……….Sweet potato pie tastes amazingly close to pumpkin but in many ways even I – who love pumpkin – like sweet potato pie better! 🙂

Our Mom loves to make and eat pumpkin muffins. All the grands love them too. She is going to try this bread as it sounds very yummy, especially with the crumblies:)

Our mom loves pumpkin. This sounds like a real winner, but Mom says she would add some pecans to the batter and also to the crumble. Has Mom Pam ever tried that? Hello!!! Thanks for popping by to see the latest Halloween-ish, Fall-ish recipe we had on our blog – we usually do BACON recipes because I am the KING OF BACON (hahahaha – all cats are right?). Anyway, it’s nice to meet new friends…..we just peeked at your blog and signed up to get notices when you post. Louis is a lucky guy to be rescued and given a home…..my humans adopted me from the same shelter as their previous cat Sammy – I was already almost a year old when they got me. Very used to being independent and outside. They trained me on a harness/leash and now I ask to go outside about 100 times a day – sadly they don’t always comply. We have lots of foxes here – they almost killed the cat my humans had when they built our house and moved here so they only let me out SUPERVISED. Lots of people have lost small dogs and cats in our neighborhood! EEEEEEEK! Hope to see you again soon……….stop by any old time.
