Baking with Bacon in Castle Baconia!

Welcome to the kitchen of Castle Baconia – I am your King but on Saturday I’m also your chef!

That’s right – I have taken on the responsibility of loading you all up with recipes that involve BACON and today is no exception…….this one is a MAJOR winner at our house.   Mom likes to have uses for her leftover smashed (oops I mean mashed) potatoes so you CAN use those but you can also just join up a fresh batch.    My parents here in the castle are BIG on bleu cheese and some people aren’t so you can substitute if you want.   But trust me – this is another GOOD TASTING SIDE DISH!!

Bacon and Blue Cheese Potato Pancakes

Ingredients:

  • 2 pounds potatoes, cubed
  • 1/3 cup crumbled blue cheese
  • 1/4 cup 1% low-fat milk
  • 1 egg
  • 3 green onions, thinly sliced
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup bread crumbs
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon butter
  • Add all ingredients to list
  • 4 slices of bacon – crumbled

Directions:
  1. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until browned and crisp, about 10 minutes. Drain on paper towels; chop into smaller pieces.
  2. Place potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain and return to the pot; mash slightly.
  3. Stir bacon, blue cheese, milk, egg, green onions, salt, and pepper into the pot; mash mixture with a potato masher to desired consistency. Cool slightly, about 5 minutes.
  4. Pour bread crumbs into a shallow bowl. Shape the potato mixture into twelve 1/2-inch thick cakes; dredge in bread crumbs.
  5. Heat olive oil and butter in a large nonstick skillet over medium heat. Add 4 potato cakes; cook until browned, about 2 minutes per side. Repeat with remaining potato cakes. Cover and keep warm.

This HAS to be good!!!!!!!

You know most recipes are truly just GUIDES – people who cook adjust/substitute as they want to so of course that applies to any and all of the recipes I give to you.   That goes for bacon too – turkey bacon can be substituted!

But the fact of the matter is BACON does make everything better!!!!

    • Thanks Pix……….we’re having a quiet, cloudy and probably eventually RAINY anniversary today but then again that’s OUR kind of day! These potato pancakes are incredibly good – I think it’s the bleu cheese but then they’re good with any cheese. I know you like leftover mashed potatoes for potato pancake fun so GO FOR IT GIRLIE!

    • Thanks Madi! It’s only 28 years though not 38….my Mom said “sometimes it FEELS like 38 or maybe 68 years but other times it feels like just yesterday we got married”……..I think that’s a good thing!!!

  1. Happy Anniversary to your wonderful folks! I love their wedding photo, they both look amazing. That recipe sounds good, my mom loves bleu cheese, I prefer gorgonzola so I may substitute that. I hope your folks have something special planned for today. XO

    • Mom says to tell you just about any cheese is good if not bleu cheese – mozzarella or gorgonzola or even cheddar…YUM. Mom and Dad were having a good time on their wedding day – that photo was taken close to when they were about to get back in the limo and leave the reception to go home and get ready to go to the airport on their way to ROME! The most magical part of the photo is in the background Mom’s Dad was just coming outside to get some air when the photographer snapped the photo. So it’s Mom’s favorite wedding shot because my Grandad is in it.

    The recipe sounds delicious and definitely one I will be doing. I often mash Cheddar into Bubble and Squeak which is vaguely similar so I will try the blue cheese with that too.

  3. Furst CONGRATULATIONS Mom and Dad. You two look so good together and have made a great home for Teddy and Sammy befur him. Those Potato pancakes are going into Dads Recipe book but since he does not like Blue Cheese he will do them with Mozzarella

    • Thank for the compliment – I’ll pass it on to my Mom and Dad…………..lots of peeps don’t care for bleu cheese so indeed mozzarella would be delicious as a substitute – or almost ANY cheese really. Mom said she was going to try it with shredded cheddar too but my parents LUV bleu cheese.
