TIME TO FOOD SHOP HOP!
Our friend Bacon the pig hosts this hop once a month and what’s so fun about it is we wind up sharing a lot of recipes with each other AND part of the fun of that is listing the prices we pay for all the ingredients. Since Bacon has followers and Hoppers all over the world, we get to see if what WE pay for things is any worse than anywhere else……most of the time it isn’t…….food is expensive EVERYWHERE! The best part my Mom says though is the recipes. So here we go – this month’s “THEME” is:
SANDWICHES
My Mom is in love with avocados and always has been. I know not everyone likes them but they are a healthy choice and this is extra nommy with the apricot preserves in there! This recipe makes FOUR sandwiches which may or may not feed four people depending on how hungry everyone is…….might just feed ONE (haha).
Toasted Avocado/cheese
Ingredients: (Prices from our local Harris Teeter grocery store)
Two ripe avocados, peeled and sliced (Price: $1.79 for two)
1/3 cup Apricot preserves (Price: $1.69 for 18. oz. jar)
French Bread (the best but really can be ANY bread) (Price: $2.59 for French bread)
Havarti cheese slices (Price: package of 10 slices $2.99)
Directions:
Spread four slices of bread with preserves and layer with cheese and sliced avocado. Sprinkle with salt. Add piece of bread to the top and butter outside of both slices. Pop on a griddle (or in a frying pan) for 2-3 minutes on each side until the cheese is all nice and melty!
Easy Peasy………………and if you’re a nut for avocados, a very tasty way to “GET YOUR AVOCADO ON” !!

If you like avocados – you’ll LOVE this one! We just read your last post with SOOOO many adorable pups and kitties who travel with you and look serene, calm, and happy both DURING their trips and most certainly at the end of their journeys when they are reunited with their families. It always makes us smile – it’s a wonderful thing that Animal Couriers does – making it possible for frequent travelers who love their pets to STAY with them wherever they go.

I forgot about The Teaser! Can you imagine that… what with all the stink I forgot! Those sandwiches will be made by tomorrow. I have to use the Magic Gate today for the avocados, apricot preserves, and French bread. Havarti always stocked at our house which have I mentioned?… stinks.

Yes I know you don’t mean the Havarti stinks – it smells delightfully LIGHT…..but that red tide ick I’m SURE stinks! I can also say that this is one of the most delish sammmmmmiches EVER!!!

I love avocados so this sounds extra tasty. I haven’t heard of Havarti cheese so maybe Cheddar would work? I usually buy extra matured cheddar with a strong nutty flavour.

Havarti is kind of mild compared to cheddar but I do have to admit that cheddar is my FAVORITE cheese. We do have Havarti slices in our grocery so it was easy to get them but if you don’t have Havarti available – try any cheese – it’s just delightful with the sweetness of the preserves and avocados which I ADORE too!!

WHAT????????????????? NEVER???????????? Well, I love them AND I actually have several plants that I’ve started from avocado seeds in my house. They are FUN to grow – rather fascinating in fact. I’m sure I’ll never actually get avocados from them but they are interesting house plants – I have one in a pot outside on my deck too. Anyway, avocados have a mild taste but we love them sliced on a hamburger, cut up in a salad, etc. I like them as a snack too – with salt on them…..yummy.

How funny – Mom would love that sandwich MINUS the avocado. She just doesn’t like it even though she knows it is supposed to be VERY good for her. She would love the cheese and and apricots thought
