您好!(nín hǎo) “Hello” !!

Greetings from Chinatown!    Continuing my journey around the world collecting bacon recipes for all of us who ADORE “the B word” that we know as BACON!    I hope you are enjoying my trips as much as I am.    It’s fun to see just how bacon fits in to so many different types of recipes around the globe.

This week I give you something you may even have had before……………it’s beyond delicious for breakfast but of course can be eaten any time the NEED for a bacon feast arises.   You probably have most of these things on hand already.    Remember you can usually make some substitutions without making much of a difference.    You will enjoy this one.

Bacon and Egg Fried Rice

 

Ingredients
  • 1 tablespoon oil
  • 3 large eggs, beaten
  • 8 oz. lean bacon, cut into 1-inch pieces
  • 1 medium onion, finely diced
  • 5 cups cooked rice, fluffed and cooled
  • 1 teaspoon salt
  • ¼ teaspoon sugar
  • 2 teaspoons soy sauce
  • 1 teaspoon dark soy sauce
  • fresh black pepper, to taste
  • 2 scallions, chopped
Instructions:    (I used a regular frying pan – the wok is just more authentic!!)
  1. Heat the oil in your wok over medium heat and add beaten eggs. Gently scramble the eggs, remove from the wok, and set aside.
  2. Keeping the heat at medium, add the bacon to the wok and allow it to render down and become crisp. The level of crispiness you achieve here is totally based on personal preference. Once the bacon’s looking good to you, take it out of the wok and set aside along with the scrambled eggs.
  3. Add the diced onion to the wok and stir-fry until translucent. Once they’re translucent, add the cooked rice and stir-fry for 2 minutes. Use your wok spatula to flatten out and break up any clumps. Add the salt, sugar, and soy sauces.
  4. Give everything a good stir for another minute or so. When you start to see steam coming off the rice, that means it’s heated through. If the rice looks a little dry, feel free to sprinkle in some water or chicken stock. Adding some liquid directly to large clumps of rice will also help to break them up.
  5. To finish the dish, stir in the scrambled eggs, bacon, pepper, and scallions. Serve!

Oh boy – just reading the recipe makes me wish I had a great big plate full of this RIGHT NOW.

Too bad I’m in China or I bet my Mom would make some for me…………………..wait – I can have it – I’ll just pop into one of these restaurants here and have THREE orders of it ALL to myself!

Shopping Around The World

Hello friends!    It’s time for Shopping Around The World with our buddy Bacon………..we get together usually once a month to share recipes – AND prices for the ingredients – because it’s rather amazing to see what everyone ELSE pays for food around the world.    Sometimes we are surprised how much LESS (or MORE) we pay for the same stuff depending on where we live.    But the best part is getting recipes from everyone!     The theme for this month was EASY SUMMER meals……..you know we just don’t feel like staying in the kitchen for too long in the summer and we usually eat LIGHT in the summer.    My Mom loves to make salads in the summer so we’re sharing a recipe that almost everyone knows AND it’s one we’ve shared SEVERAL times before but it’s so good, we’re sharing it again.

One of Mom’s faves is a nice SIMPLE  shrimp salad………………….and when I say simple, I mean SIMPLE!

SHRIMPSALAD

Ingredients:

Package of cooked shrimp – 12 oz. $8.99 (remove shell from tails of course!)

One head romaine lettuce – torn into bite size pieces – $1.99

One chopped red bell pepper – $2.49 Each (yes that’s a lot for ONE bell pepper!!!!)

One stalk chopped celery – one bunch of celery $1.99

One chopped cucumber – $.50 each

Mayonnaise to hold it all together!  – 8 oz. jar Hellmann’s Mayo – $2.99

 

Sometimes Mom adds a bit of chopped sweet onion to this – she also livens things up on occasion by putting curry powder in………………my parents are curry crazy.   It adds a bit of zip to the shrimp salad.

So – doesn’t get much easier than that right?   Mom and Dad will fill a bowl up, take it out to the back deck and eat this with a glass (or three) of white wine as the sun goes down on a warm summer night.    While they’re doing that, I’m staying inside in the cool house snoozing.   Sounds like a good arrangement don’t you think?

It’s Friday!  Time to Fill-In!

I thought I’d let Mom fill-in today……………..give her a little treat you know……….I don’t let her do this EVERY week – I wouldn’t want to spoil her!

Here are this week’s sentences and Mom’s fill-ins are in BLUE.

1. Fireworks are so darn loud and noisy – they scare Teddy and with all the trees around I’m always worried about fires.

2. My favorite 4th of July picnic food is hot dogs – always has been and probably always will be my favorite!

3. I begin every day with A prayer and coffee – not necessarily in that order!_________.

4. Homemade biscotti is the best thing since sliced bread.

 

OK Mom – you did well…………and I’m glad you worked ME into one of your answers.   I really don’t like all that noise for sure.   Angel Sammy told me that you and Dad used to do fireworks in your front yard and he didn’t like that much.   You haven’t done that since I’ve been here and I hope you don’t start!    Actually he said they were just fountains – nothing loud- just sparkly and colorful.   That I wouldn’t mind too much……..so if you wanna have a few, I promise not to be a scaredy cat.

Thankful and Thoroughly Poetic Thursday

Happy Thursday!   Time to share our thankfuls from the past week on this blog hop that our buddy Brian hosts every week.   Wanna join in?  Just click the badge above and DO IT!    This week I have to say I’m thankful that we have had TWO days of sun.   I don’t mind rain – in fact I will walk outside and act like I don’t even notice it’s raining like mad – but I prefer sun and puddles of sun.   Who wouldn’t?   If you’re a cat anyway!    I’m ALSO thankful my brother Angel Sammy did his usual and reliable thing of transmitting via his Bridge Laptop this week’s THOROUGHLY POETIC poem………what would my week be without that too?   Well, it sure wouldn’t be as much fun.

Below is the email I got from him last night.   If you’ve never participated in the sharing of a poem inspired by one of Sammy’s photos he gives us then maybe this is the week you should try!!

Hello my friends!   It’s already Thursday even though it seems like YESTERDAY we shared our photo-inspired poetry here, doesn’t it?   Time flies – not just for your Earth-bounders but also for those of us at the Bridge.   Anyway, the idea behind this whole thing is that I give you a photo every week and you have a whole week to write a poem based on that photo; how it made you feel looking at it, things you thought about when you looked at it, what you see in your heart and mind when you look at it.   Got the idea?    It’s easy – and so is writing a poem.   Trust me – poetry takes all sort of forms and sometimes doesn’t even rhyme – it’s just full of feelings or thoughts.   GIVE IT A TRY!

“Paradise”

An oasis in the midst of the endless sand

A welcome spot in a magical land

Echoes of ancient cultures all around

Breezes through the palm trees the only sound

The cats and their caretaker enjoy paradise

The wind off the water feels ever so nice

The royal caretaker serves the cats to the best of her ability

The felines belong to a family of nobility

This restful break from court will soon be at an end

Soon a chariot will arrive – one the King will send

The caretaker and her charges will return to their home

The royal cats walled in so they can no longer roam

Paradise will be waiting for the next time around

When by the oasis, contented purrs are the only sound………..

 

 

I know Teddy would enjoy a trip to this place wherever it is and I know I’d like to meet him there…………………Perhaps this is a spot here at the Rainbow Bridge that I’ve not yet seen – it looks quite magical that’s for sure.   I can’t wait to read YOUR poems – did you write one?   Let us know that you did in our comments – give us your blog link so we can read it OR write your poem in our comments HERE.    YOU CAN DO IT!

We think this is an incredibly interesting building……………….it’s the Butcher’s Hall in Ghent, Belgium.    It’s a VERY old structure – built in 1418………these days it holds wonderful restaurants, and shops but if you CLICK HERE you can find out more about its’ past.   Built to last that’s for sure!!    THANK YOU MISS JACKIE for this wonderful photo.    This badge is for you!
