Greetings Fellow Baconians! Here I am – your King – working away in the kitchen to bring you another fabulous recipe and taste treat!

Oh I know what you are making today My King – this dish is truly delicious!
I think the best thing about this dish is that it’s a crockpot recipe and it cooks all day while the cook of the house (or castle) can play or shop or sleep and not be fussing around in the kitchen to make something truly delicious for dinner. In fact, this is something that really doesn’t even need to have MEAT to go along with it. Doesn’t have to be a side dish can be a main course – just serve a little green salad with it and VOILA – DINNER’S DONE!
Crockpot Bacon and Cheese Potatoes
Ingredients
- 1/4 pound bacon, diced
- 2 medium onions, thinly sliced
- 4 medium potatoes, thinly sliced
- 1/2 pound cheddar cheese, thinly sliced (I prefer EXTRA SHARP cheddar but any cheddar will do!)
- salt and pepper
- butter
- Green Onions (optional) (it’s more of a garnish really since there are onions in the recipe so feel free to skip this OPTIONAL item!)
Instructions
- Line crockpot with foil, leaving enough to cover the potatoes when finished.
- Layer half each of the bacon, onions, potatoes and cheese in crockpot. Season to taste and dot with butter.
- Repeat layers of bacon, onions, potatoes and cheese. Dot with butter.
- Cover with remaining foil.
- Cover and cook on low for 10-12 hours.
YES – along with potatoes and some other stuff!
Bottom line is this is a delicious recipe – if it wasn’t, would your KING bother passing it on to you? I THINK NOT!!!! So give it a whirl.
I would recognize that “glazed look” in the eyes from the aroma of bacon anywhere!

Hi Katie! This is an EASY/PEASY one…..and it doesn’t tie our Moms up in the kitchen making it either since it’s a crockpot thing. That leaves them more time for US! Right?

I’m salivating, so this reads like another winning recipe! I also happen to have a Visalia onion on the counter that’s starting to sprout, so I figure it can be one of the 2 onions AND the green garnish! The onion might not think this is kismet, but I do 😉 Hope you have a wonderful Memorial Weekend.

My Mom uses Vidalias in EVERYTHING – if she can’t find them she uses sweet onion but Vidalias are SOOOOOOOOOOOOOOOOOO yum (not for me but for Mom and Dad anyway!). Good luck with the recipe – its really delicious!

Now Mom loves all things that can be made in the crockpot. And this sounds perfect since Mom and Dad both love bacon and onions. Maybe we can get some of the bacon before she puts it all in with those darn onions:)

Mom bought bacon yesterday………so far we haven’t seen any of it!! Our house smells yummy today too since Mom put country style ribs in the crockpot. We hope she shares.

It’s really yummy……even for breakfast…….with scrambled eggs? MMMMMM…..Anything that’s a crockpot thing so Mom can spend more time with ME,ME, ME is a recipe I’m in favor of! 🙂 Mommy said to ask you if “everything is still on track”…..I don’t know what that means but she said YOU would. 🙂

Everything is still on track! Today, hopefully will be a calm day and I can shoot her an update. Yesterday at The Mama’s was a very special nice day for “her boys” and the wives… 🙂 We had a special wine time for The Mama with the other ladies at her condo complex.
