Bakin’ With Bacon

Greetings Baconians!  It’s me – your King, playing in the castle kitchen again!

Today I have a truly yummy thing that I hope you will try – your family will be happy you’re serving potatoes to them in a DIFFERENT way, and your tummies will all be happy because it’s a recipe that includes our favorite thing – BACON!

Oh Monsieur King, this truly will be a grand addition to the royal menu!!

Ready?????  Let’s begin!

 

Potato Dumplings With Bacon

Ingredients:

2 large potatoes, peeled and chopped

2 large eggs

Flour

1/4 pound bacon cooked and chopped

1/2 large onion chopped

Directions:

  1. Bring a large pot of lightly salted water to boil.
  2. Place potatoes in food processor, and pulse until finely chopped. Add eggs, and pulse a few times to combine. Pour mixture into a large bowl. Mix in enough flour to make a very thick dough.  (add a little flour at a time to get your dough thick so it will hold together in the water!)
  3. Place dough by spoonfuls into boiling water. Boil until done, about 20 minutes (depending on size). Drain, and set dumplings aside.
  4. Place chopped bacon and onion in a skillet over medium heat. Cook a few minutes until bacon releases fat. Place hot dumplings into pan; cook until bacon is crisp and onions and dumplings are browned.

How great is this as an alternative to some other starch for dinner?   Not “just potatoes” but potato dumplings AND bacon – together – who knew???!!!!   YUM.

I hope you’ll give this one a whirl.    Meanwhile I shall be on the hunt for another fabulous baconized recipe to share with you NEXT Saturday when I again raid the castle kitchen and become your BACON CHEF DE CUISINE!

  1. Wow – we’ve never heard of potato dumplings. That recipe sure sounds good, but Motor Mommy doesn’t have a food processor! Maybe this will be her motivation to go buy one!

    • Well you know even though we start our bacon plants in the greenhouse it’s been a weird winter so far…..spring is struggling even INSIDE! No worries though we WILL have a bacon harvest this year!!

  2. Mom’s never been fond of dumplings, but she’s never had potato ones. That’s probably better than a big dough ball. Nice to see Sammy today. We miss him, but Teddy you have followed in his paw prints purrfectly.     • They aren’t sticky like regular dumplings – and my parents both like potatoes so this was tailor-made for them. But frying them is something they NEVER thought to do however if bacon is involved – BRING IT ON!

I just wanted to take some time to thank the Bacon King for having a talk with the “chefs” at Golden Corral, because after I complained about their nasty bacon a few weeks ago, the last two times I ate there the bacon not only looked edible (an improvement in itself), but was actually delicious! I think Thursday I may have eaten as much as what is on that sandwich you always post…

    • Good bacon is worth its’ weight in……………um………..bacon! Glad Golden Corral got the hint that bacon is important enough to people that they should put a little EFFORT into cooking it!

  4. We don’t know if our Dad has ever had dumplings, but since he LOVES bacon, how could he not like this recipe? And bacon cooked for Dad means some bacon for us:)

  5. As you know, we have no bacon at our house – *SIGHS* – but we do have potatoes! Sometimes, if Peep #1 mashes ’em up and adds butter, I try to steal a bite… Wait a minute! I am Seville the Cat. How can I “steal” what is already mine? That’s impossible, is it not? MOUSES!

    • That is right Seville! Those potatoes are yours and you are entitled to them with all that delicious butter on them. They make fabulous fried dumplings too…..even if you aren’t allowed bacon – butter is almost as good!

  6. Hmmm…we’ve never had potato dumplings…Mom’s not big on potatoes, but she likes the recipe…she says that she will try making this next time Dad comes to visit (he is the potato liver).

    • My parents both like potatoes so this one was a goodie for them. Of course I like the recipe because it’s an excuse to fry up some bacon and THAT is the only part of the recipe I’m interested in!! I hope your Mom will try these though if your Dad’s a potato guy…..they really are quite delicious Mom says.
