Easter and Passover Greetings My Fellow Baconians!

It’s me – your King of Baconia who enjoys spending time in his Castle Kitchen on Saturday morning whipping up some kind of bacon-related treat for his loyal subject – YOU!    Today I am giving you another EASY one – perfect for Easter morning……..and yes it’s a BREAKFAST item yet again but it’s totally cool because while it’s a QUICHE it requires NO CRUST!    Not only that but it’s QUICK to make.

 

Quickie Quiche

Ingredients:

8 slices bacon

4 oz. shredded swiss cheese

2 Tablespooons melted butter

4 eggs beaten

1/2 cup finely chopped onion

1 Teaspoon salt

1/2 cup all purpose flour

1-1/2 cups milk

Directions:

  1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  2. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
  3. Line bottom of pie plate with cheese and crumbled bacon. Combine eggs, butter, onion, salt, flour and milk; whisk together until smooth; pour into pie pan.
  4. Bake in preheated oven for 35 minutes, until set. Serve hot or cold

The other cool thing is you really can add WHATEVER ELSE you might want to this quiche and it just makes it better……….little bit of cooked broccoli maybe?   Even things like cooked shrimp chopped up?    Why not add whatever you want………….it’s such a simple recipe you just can’t go wrong.    I particularly love that you don’t need to make a crust or BUY a crust.

Not very “mancatly” is it……..and certainly since I’m royalty I suppose it would be KING TRIXY but something about that is SOOOOOOOOOOOOOOOOO wrong!

    • Mom made that casserole for dinner last night…….gotta be the bestest and easiest meal EVAH! Enjoy! Let us know what you think! Remember to keep an eye on the cornbread (stick in toothpick to make sure it’s done although (SECRET) Mom has eaten it with the cornbread not QUITE done and it’s still good…HAHAHA).

    • Happy Easter Sundae! My Mom loves quiche a lot but sometimes she’s not in the mood to do that crust (if she doesn’t have an aleady made one) so THIS works out perfectly! Same deliciousness without the fuss. Sorry your Dad won’t eat it – but tell your Mom to make a “mini-version” and cut down the proportions – she can make one for HERSELF!

    • It is – and we agree with you about the crust – this is kinda cool with the melted cheese on bottom which makes a bit of a crunchy bottom like a crust but without the fuss!!!!!

    • Actually – truth be told – you can use ANY CHEESE you like (my Mom uses sharp cheddar) – and over here they market cheese called “SWISS CHEESE” which probably is a blend of cheeses. The cheese just makes a “crusty” bottom to this quiche so use any cheese that’s your favorite!!!

  4. We must be psychic, Teddy! I made a quiche this morning and I made it without pastry too. I did it just the same way as you except that I used a strong cheddar cheese instead of Swiss cheese.

    • Know what? My Mom uses sharp cheddar too instead of swiss – swiss is kind of bland and Mom is a CHEESE GIRL….LOL Psychic? Maybe! “Like-minded”? Definitely! We are sending you and Mr. Ivor EASTER HUGS and hope for a wonderful day and Spring……….
