Bakin’ in Baconia for Easter

Easter and Passover Greetings My Fellow Baconians!

It’s me – your King of Baconia who enjoys spending time in his Castle Kitchen on Saturday morning whipping up some kind of bacon-related treat for his loyal subject – YOU!    Today I am giving you another EASY one – perfect for Easter morning……..and yes it’s a BREAKFAST item yet again but it’s totally cool because while it’s a QUICHE it requires NO CRUST!    Not only that but it’s QUICK to make.

 

Quickie Quiche

Ingredients:

8 slices bacon

4 oz. shredded swiss cheese

2 Tablespooons melted butter

4 eggs beaten

1/2 cup finely chopped onion

1 Teaspoon salt

1/2 cup all purpose flour

1-1/2 cups milk

Directions:

  1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  2. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
  3. Line bottom of pie plate with cheese and crumbled bacon. Combine eggs, butter, onion, salt, flour and milk; whisk together until smooth; pour into pie pan.
  4. Bake in preheated oven for 35 minutes, until set. Serve hot or cold

The other cool thing is you really can add WHATEVER ELSE you might want to this quiche and it just makes it better……….little bit of cooked broccoli maybe?   Even things like cooked shrimp chopped up?    Why not add whatever you want………….it’s such a simple recipe you just can’t go wrong.    I particularly love that you don’t need to make a crust or BUY a crust.

Shopping Around The World and Friday Fill-Ins

It’s Double Duty Friday!  

Today we will be doing Friendly Fill-Ins which is a fun hop co-hosted by Annie of McGuffy’s Reader AND Ellen of 15andMeowing……….THEN we will be adding to that post, our “SHOPPING AROUND THE WORLD” which is hosted by our porcine friend Bacon at his blog PIGLOVE.

Fill-Ins are one of the coolest Hops we know of because it’s so much fun to learn things about each other simply by filling in the blanks in sentences that our co-hosts give us every week.   What’s easier than that?   Sometimes I get to fill in and sometimes Mom gets to fill in and sometimes we both do.   Wanna play along?  Click McGuffy’s badge above and fill in the LINKY tool to join us.

Here are the FOUR sentences – two from each co-host…………..and I’m letting my Mom fill them in this week!    Her “fill-ins” are in BLUE.

1. For Easter (or Passover), I hide Easter eggs inside the house for my husband to find – it’s a long-standing tradition!

2. My favorite Easter (or Passover) treat is chocolate – I can’t deny it!

3. Lately, the song “Something About You” by Level 42 – it’s an oldie but I heard it on the 80s’ station on the radio the other day and it is stuck in my head.

4. The A-Z Blogging Challenge is an annual event I’ve never participated in – I seem to just be too darn busy with other things but it’s fun to see what others do with the challenge.

 

Thanks Mom – I guess by “BUSY WITH OTHER THINGS” means ME right?   Oh well………

Now, onward to the next thing which is “SHOPPING AROUND THE WORLD”……………..this one is cool because every month our host Bacon gives us a project to research and provide a recipe for – like it could be “favorite dessert” or “favorite sandwich” – then we give the recipe for whatever it is that we make and a list of all the ingredients which includes the PRICES we pay for stuff – what’s so great about that you ask?   WELL, it seems there’s a HUGE difference around the world in prices of food so it’s kind of fun to compare prices PLUS it’s neat to collect recipes!

This month Bacon wants to know what our favorite “GO TO” menu/dish is.   Something our Moms or Dads make that they might do when they need to make something yummy for company, or a favorite meal that’s easy to make when you can’t think of anything else – that kind of thing.   In my house that could be a number of things……but the very EASIEST “GO TO” around here is when Mom makes her Chili/Tamale casserole because it takes her about five minutes to make it.   HAHAHA

 

Ridiculously Easy (aka LAZY) Chili/Tamale Casserole with Cornbread Topping

Mom here – just wanted to say that I keep these ingredients in my pantry at all times because sometimes you just want to throw something together at the last minute or you don’t have TIME to cook all day or you just plain want to dump a bunch of stuff in a casserole dish and make it EASY on yourself!!

Preheat oven to 375 and have your “whatever size” casserole dish ready to pop in the oven after you put your ingredients together.  I have a nice 3 quart round ceramic casserole dish that I use but use whatever size you want and upsize or downsize the ingredients to fit your family.   It’s just the two of us here and my husband eats this stuff like there’s no tomorrow while I have one serving!

INGREDIENTS:

2 LARGE cans of chili – your choice of types – we prefer Hormel’s HOT chili with beans ($1.95 for 15 oz. can)

1 can Hormel Tamales in chili sauce ($1.59 for 15 oz. can)

1 package cornbread mix – I usually get Betty Crocker or Jiffy brand – these are the little packages that you just add sometimes an egg and milk to – EASY!   ($.99 on sale)

HOW TO:

I layer my tamales (after you remove the paper wrapping!!!!) in the bottom of my casserole but some people put them on top and others in the middle.   Doesn’t matter.    The put the cans of chili on top.   Put casserole in the pre-heated oven for about 30 minutes or until it JUST starts to bubble a bit.   Make your cornbread mix and pull your casserole out of the oven long enough to dump the cornbread mix on top of the casserole spreading evenly – pop back in the oven and cook until cornbread is done (look on package of cornbread you’re using for how much time AND you might need to adjust the oven temp too for the cornbread!).    This is absolutely DIVINE.   Simple YES but delish too.   Scoop out servings of the whole thing and if you are a chili lover, I guarantee you’ll have SECONDS!

Thankful and Poetic Thursday

It’s Thursday!   Time for the THANKFUL blog hop Brian hosts at his blog AND for Angel Sammy’s poetry day.    First though let’s give some time to be THANKFUL.   If you want to join us, please click Brian’s badge and join in by filling out the LINKY tool.    It’s great to share our thankfuls every week.    This week I’m super thankful that the weather has been nice enough that I’d been able to go outside a LOT and it’s not even really NICE and Springy – but it’s NICER than winter weather so my parents have been taking me out more.   I love being in my yard……..I munch on grass (yes we actually have some coming up already!) and enjoy the sun on my furs (if the sun’s out of course otherwise I just ENJOY the fresh air).    Mom and Dad are positive I was an outdoor kitty before they adopted me – I love the great outdoors and actually enjoy the COLD.    I think that’s why they think maybe I was a barn cat or had a major outside connection.   I can’t give it up but at least I’m SAFE out there with my harness and leash on.

Now for the next part of today’s blog – Angel Sammy transmitted his POETIC THUSDAY poem to me via his internet connection at the Rainbow Bridge so I will show you that now!

Hello Friends!   Ready for some poetry?

I hope some more of you have thought a little more about joining in our Poetry Challenge every week because it sure is FUN.    I didn’t have a lot of time to work on a poem this week because they are keeping us busy at the Bridge with Easter and Passover coming up……..we have a lot of ANGELIC duties to take care of you know.    BUT I did find some time and using the photo I gave you last week as your poetic inspiration, I crafted my poem based on this photo!  

First of all – don’t you just LOVE this photo?   what a fabulous spot this would be to spend a summer afternoon…………all those beautiful tulips and petty green trees and grass????!!!!   Spread out a picnic blanket and VOILA – heavenly!    So here’s the poem I wrote to go with this photo.

“Happy Faces”

Acres of blooms in gardens galore

Springtime is popping with flowers and more

Trees bud and shrubs grow and nature awakes

New growth needs warm breezes and all the sun it can take

Blooming flowers in colors from pastels to deep hue

Glistening in morning sun as it shines on the dew

Have you ever noticed when you see flowers that they make you smile?

It’s great to observe if you sit down in a garden for a while

People stop and point and smell the bouquet of  scent in the air

For a minute or an hour, you can forget all your cares

Get lost in the glory that comes from the flowers

Their beauty and color contain so much power

A garden of flowers is such a happy place

It’s for sure you will see more than one happy face!

 

Flowers are special – and you can’t look at a garden full of flowers without smiling at the wonder of the beauty of nature.   I used to go out in to my Mom’s garden when she had one in our backyard and just SIT…….I sometimes would lie down and squash some flowers accidentally (oops) and stay there for an hour – sometimes falling asleep while Mom pulled weeds or cut flowers all around me.   I just found it a happy place.   She doesn’t have a flower garden anymore but it’s a fond memory of mine.    I expect Teddy will enjoy being outside with Mom as she weeds her perennial bed (which is a lot less work to have!).

A bunch of you examine this photo really closely and determined it just plain looked “too good to be the REAL Parthenon” in Greece……………guess what………..you were RIGHT about that.   This is a Parthenon built in NASHVILLE, TENNESSEE back in 1897 for their Centennial Exhibition – it is now an art museum.    Here is a link for more info CLICK HERE.    Isn’t that VERY VERY cool?

Sunday Selfie

It’s time for a HOP!   Yep – our regular Sunday Selfie Blog Hop hosted by The Kitties Blue at The Cat On My Head.    We just post ourselves doing our “thing” (whatever our thing may be) and share……….and you can too – click on their badge above and LINK up!

Mom is doing a FLASHBACK Selfie of me this Sunday………………..in fact, it was one of the very FIRST Selfies I did after I was adopted.   I was still a bit SMALLER than I am now but even then, I was almost a year old.

Time flies………………………..even if you wish it wouldn’t sometimes!!!

We found the date of this one and it IS the first Selfie of me………………..February 19 was just seven days after I came to live with my Mom and Dad.    Thi is me snoozing on Dad’s office chair.   Mom probably used some kind of Lunapic filter on it but who knows?!?!

Bakin’ With Bacon In Baconia!

‘Tis I – Your King – your “Bacon King” for this morning!!

I have another yummy and easy breakfast treat for you that can “cogitate” in your refrigerator overnight and be popped in the oven the next morning while you do other things – water the lawn, take a hot soakie bath, do your hair and makeup, trim your toenails (yuck), mow the lawn (alright maybe you won’t have time for that), do some laundry – WHATEVER.    You make this the night before and get all the work out of the way so you can bake and EAT the next day.

Easy Overnight Bacon and Egg Casserole

Ingredients

  • 6 strips Bacon (as usual I say you can do MORE or LESS bacon as you wish!)
  • 6 Eggs, lightly beaten
  • 3 C. 2% Milk
  • Sea Salt, to taste
  • Ground Black Pepper, to taste
  • 6 C. French Bread, cubed (or any country style bread loaf with a crust)
  • 2 C. Shredded Colby and Monterey Jack Cheese

Grease a 9×13″ baking dish with nonstick cooking spray.  Fry or microwave bacon until crispy. Crumble and set aside. In a large mixing bowl, whisk together the eggs and milk. Stir in salt and pepper as needed to taste. Add the French bread cubes, cheese, and bacon, and stir to combine. Pour the mixture into the prepared baking dish. Cover dish with plastic wrap and refrigerate overnight.

Next morning just preheat oven to 350 degrees. Bake casserole for about 1 hour, or until a toothpick inserted in the center of the casserole comes out clean.

VOILA!   Breakfast fit for a King or a Queen (or even those lowly peasants you live with……….).

Oh I shall add this to the royal menu Monsieur King!

We have to keep an eye on the kitchen staff around here!!

You don’t want to just be AVERAGE do you????   Heck no – have more bacon!

This week Mom is doing the filling in and she chose GREEN for her words………..GO MOM GO!

 

1. I am the middle child in my family.

2. I have two siblings.

3. I am looking forward to seeing my perennial garden blossoming (assuming Spring ever gets here of course!) this Spring.

4. The first sign of Spring this year was seeing it on my calendar – just because it SAID it was Spring though didn’t mean we could SEE it because we had snow yesterday!!!.

 

Well Mom and I are wondering if we will ever really have Spring.  The snow we had yesterday is melting BUT snow is in our weekend forecast yet again.   We kind of think Spring got lost somewhere – like in the Bahamas or maybe Bermuda or SOMEWHERE but it sure isn’t HERE yet!
