Bakin’ With Bacon In Baconia

Greetings Baconians!  Time to BAKE!

Hello from the kitchens of the Baconian Castle where I – your King Teddy – am preparing another bacon-full delight and this time it’s just a very SIMPLE Bacon Casserole that you might want to have your Mom WHIP UP on Christmas morning!!!    It can be made the night before so you can enjoy it Christmas morning then open all your packages from Santa Paws as soon as you gobble it down!

Yes it is and that’s why I think starting your Christmas morning off with this recipe would be LOVE-ly!

Easy Peasy Bacon Casserole

INGREDIENTS

  • 1/2 pound sliced bacon
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 12 eggs
  • 1 cup milk
  • 1 (16 ounce) package frozen hash brown potatoes, thawed
  • 1 cup shredded Cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  1. In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 2 tablespoons drippings. Crumble bacon and set aside. In same skillet, saute onion and green pepper in drippings until tender; remove with a slotted spoon.
  2. In a large bowl, whisk the eggs and milk. Stir in hash browns, cheese, salt, pepper, onion mixture and reserved bacon.
  3. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 350 degrees F for 35-45 minutes or until a knife inserted near the center comes out clean.

Easy?  You betcha!

Like I said, gobble this down – maybe with some homemade biscuits and then attack all those presents under the tree.    You don’t want to waste time having a long drawn out breakfast on Christmas morning!

Well if you should have any leftover bacon – EAT IT.    Don’t let it be lonely on the plate – nothing worse than sad bacon I always say.  And I should know – after all I am the KING OF BACONIA.

Those of you who are really MAJOR bacon fans might like to know that there are a lot of bacon Christmas tree ornaments available out there……………..

AND, for the ADULTS out there – our friend Carol sent in this little indulgence which is definitely NOT “kid friendly” but might be just the ticket for parents after a morning of screaming kids excited over Christmas!!!!

Well kiddies – that’s it from Baconia this morning……………we hope you will INSIST that your personal kitchen staff make the simple casserole for you as it DOES have bacon in it (and you can instruct them to put even more in than the recipe calls for you know!!!!)…………and is delicious too!

Even the King of Baking needs a rest after fixing breakfast right?

  2. That sounds like a yummy recipe! I wish I had bacon this weekend… and I could have, I bet, if I’d gone to the Phoenix cat show. But my human wanted to stay home because her boyfriend’s band is doing a rare Los Angeles show (most of them are on the East Coast). So her gain is my loss (of bacon).

  3. That recipe is awesome! Great to take to our family Christmas. I will take it for a test drive tomorrow. No bacon in the house today. Would it be excessive to make some cream gravy to pour over the top of a serving? I woulda never thought of the gravy if you hadn’t mentioned biscuits! Merry Saturday!

    • OH MY GOODNESS gravy would be AMAZING dumped put on top of those eggies! GO FOR IT MISS PIX…….golly gee – but you need to get bacon on that grocery list as a permanent “GOTTA HAVE” !!

  4. Those bacon ornaments are great- I wonder if Kevin Bacon has some 🙂 The recipe looks good too, I make a tater tot casserole and now I am thinking some crumbled bacon in that would make it better.I will pass on the vodka though. Have a great weekend! XO

  5. Now Momsays she can’t imagine that bacon vodka would taste very good, but it might be good added to a cake or cookie recipe. These are some of the cutest bacon ornaments we’ve seen. Do you have one or more for your tree, Teddy. It is snowing here. Right now it looks really pretty. Have you been out in it? Stay warm. Don’t forget a photo. There is some kind of Cat Scout snow badge you can get before the site is changed.     • I was a BIG WIENIE with the snow. Mom thinks I’m nuts – maybe because she remembers that Angel Sammy LOVED the snow. I think maybe SNOW is like my CAT TREE – something that I will just have to get USED to on my own terms!

    • Oh we would be honored if this easy peasy recipe became the new “Christmas Breakfast” – know what? My Dad ALWAYS made Christmas breakfast for our family – he made sausage gravy and biscuits and his gravy was amazing. I try to duplicate it every year. It’s nice to have traditions…….

    • Madi! Glad you have your tree up – that means your Mom must be feeling better right? I hope so…..it’s never a nice time to be sick but especially not nice at Christmas. Senior friendly trees are great – that’s why my Mom and Dad got the pre-lit one they have now. Easy-peasy. Still though it’s HEAVY and a little tough getting up from the basement even in parts. So you got some snow? It’s pretty isn’t it. I wasn’t impressed when Mom relented to my requests to go outside and I put my paw in it. BRRRRRRRRRRRR. Don’t know WHY Angel Sammy loved snow but he did!

  8. Oh! Boy! Bacon!
    Mommy made bean and bacon soup this week. She cooked up all the bacon in the fridge and I got to have some. And I have snagged some out of her soup when she was not looking too!
    The casserole looks totally yummy! Mommy i going to ask Daddy and Alex if we can have that Christmas instead of Eggs Benny…

    • Oh Marv I’m so happy you were able to become “baconized” this week. One of my Mom’s most favorite-est soups is bean with bacon. The casserole I did Saturday is so super easy too but remember to add more bacon to it if you wanna – there’s no such thing as too much bacon right????
