Time To Shop With Our Pal Bacon!

Actually we need to thank everyone’s pal Da Phenny and his Mom for hosting “Shopping” this month for Bacon and his Mom – and Phenny picked one of my Mom’s favorite things to eat – POTATOES!    Any recipe that has potatoes in it – that was our assignment and while Mom has about a gazillion recipes involving potatoes – THIS is one of the most simple and delish ones!

Honey Roasted Red Potatoes!

First up – the shopping part of this post – we actually had butter, salt, pepper, dry mustard and onion already – so we didn’t shop for that stuff but we DID get a pound of red potatoes and some honey!

One pound Red Potatoes:   $1.33

12 oz. Pure Clover Honey:  $2.99

Here’s the full ingredient list:

1 lb. red potatoes – quartered

2 Tablespoons diced onion

1 Teaspoon dry mustard

Pinch of salt and pinch of black pepper

2 Tablespoons of melted butter

1 Tablespoon of HONEY

Preheat your oven to 375.   Lightly coat an 11×7″ baking dish with cooking spray (oil works too but spray is easier!)

Layer in a single layer the potatoes and top with the diced onion.  Combine the other ingredients in a small bowl then drizzle over top of the potatoes.

Bake 35 minutes (or until potatoes are tender) and make sure to STIR it all about half way through the cooking time.

VOILA!   Easy Peasy!

As I said before, my Mom is a potato nut.   She loves potatoes………..she makes family favorite potato salad frequently, and loves “twice-baked” potatoes………..and baked sweet potatoes and – well you get the picture – she does love potatoes.    These honey potatoes are just too easy NOT to make and they really are tasty and NOT too sweet.

Mom says I look a little like a BIG RED POTATO……HUH????!!!!

Here are this week’s sentences!   I let my Mom fill in today – aren’t I nice to SHARE?????   The spirit of Thanksgiving is still here I guess………anyway, her answers are in RED.

1. I start to decorate for Christmas/Hanukkah THIS WEEKEND!   Always right after Thanksgiving.

2. I prefer a fake/artificial Christmas tree because I don’t have to remember to water it and there’s less mess.
3. The best thing about the holidays is seeing so many people smiling and enjoying themselves – and of course being with family. 

4. The worst thing about the holidays is that they are OVER too soon and I must repack/re-store all my decorations – that is always sad!

I really don’t know what to expect for the holidays this year since I’ve never had a “Christmas” before but I do know that if it makes Mom and Dad happy, then I will be HAPPY TOO!!!!!!

    • Oh Phenny I just bet it would be good with ice cream – well, you could have a big plate of potatoes with honey on them followed by a big dish of ice cream with honey on it and you’d be SWEET FOR WEEKS!

  3. Those honey-roasted taters sound very yummy to us – thanks for sharing the recipe. Mom says all your fill-ins answers could have come straight from her mouth too. She did get a headstart with the tree last weekend, but there is still so much more to do. And yes, it is all over and done with far too quickly.

    • Imagine – a tree IN the house – what an interesting idea. I hope Mom gets it up soon! The potato recipe is easy and just as delicious as you can imagine it would be. In a house full of potato nuts (Mom and Dad love ‘taters) this is a perfect dish. There were some AMAZING potato recipes this month weren’t there?!

  5. Teddy! Those potatoes sound delicious! (or so Mom says) And we LOVE your fillins!
    Mommy took our tree out of its box last night – something about me getting used to it before Christmas…It is small, only about 3 feet tall. I can’t climb it! I knocked it down 2 times and I find the branches are fun to chew on! They make great teeth flossers!
    Mommy is hoping I will be bored of it and leave it alone…we will have to wait and see on that. I think she is going to clean off her desk and start setting up the Christmas stuff this weekend!

    • Oh MARV! So the fake trees taste good? I’m wondering about that too – I think our tree will be up in the next few days and I can’t wait to check it out. Mom is hoping I’ll be like Sammy and “admire it from a distance” and not want to climb it. Also wondering how I’ll be with the train that goes around under the tree (I don’t even know what a train is!!!!). I know one thing for sure Marv – Christmas apparently is VERY EXCITING and FUN for humans so if that’s so, no doubt WE will enjoy it too!!!!

  6. I am loving all these potato recipes and will be trying all of them. I have never cooked potatoes with honey, but I do use it for parsnips so it is sure to be another favourite.

    • We agree – potatoes was a perfect shopping item – so many delicious recipes and Mom is a “potato-nut” – she LOVES potatoes. Honey is good on a lot of things but we never thought of it on potatoes!!!!!!

    • I hope Bill will be home for Christmas PLUS some extra days – it’s tough to catch up on anything this time of year because the “to do” list gets longer and longer (or you make more and more lists!).
